Responsibilities

- Create and execute a diverse menu of modern Italian dishes, showcasing seasonal Australian produce.
- Prepare high-quality meals with meticulous attention to flavour, presentation, and authenticity.
- Oversee daily kitchen operations, ensuring smooth service and timely delivery of dishes.
- Supervise, train, and mentor kitchen staff to maintain high culinary standards.
- Handcraft fresh pasta, breads, and desserts according to Vivace’s signature recipes.
- Source and select premium seafood, meats, and ingredients to meet Vivace’s quality benchmarks.
- Collaborate with management on menu development, specials, and event catering.
- Ensure strict compliance with food safety, hygiene, and occupational health regulations.
- Monitor inventory levels, order supplies, and manage food cost controls.
- Maintain a clean, organised, and efficient kitchen workspace.
- Adapt recipes and plating to accommodate dietary requirements and special requests.
- Uphold Vivace’s reputation for exceptional guest experiences through consistent culinary excellence.
- Assist with rostering, stocktakes, and kitchen administration tasks.
- Foster a positive, respectful, and supportive team environment.
- Stay updated with current culinary trends to inspire innovation in menu offerings.

Qualifications

- Certificate III in Commercial Cookery or equivalent, with a minimum of 2 years’ experience as a Chef in a high-quality restaurant environment.
- Proven expertise in modern Italian cuisine, including house-made pasta, premium meats, and seafood.
- Strong knowledge of food safety, hygiene, and HACCP standards as per Australian regulations.
- Ability to work efficiently under pressure while maintaining exceptional food quality and elegant presentation.
- Skilled in menu planning, costing, and adapting dishes using seasonal Australian ingredients.
- Excellent communication and teamwork skills, with a passion for training and mentoring junior staff.
- Flexibility to work evenings, weekends, and public holidays as required.
- Full Australian working rights or eligibility for relevant employer-sponsored visa (e.g., 482).
